Few foods are as refreshing on a hot summer day as watermelon. But sometimes it’s easy to go overboard and buy too much of this sweet natural treat. A whole uncut watermelon should last seven to 10 days at room temperature and two to three weeks in the refrigerator. But what can you do when you’ve assessed your household’s meal plan for the week (or your free fridge space) and admitted that you just can’t eat that watermelon in time?

Luckily there is a way to use a freezer. You can absolutely freeze and use leftover watermelon after first cutting it into chunks cubes slices or balls which will keep it fresh for up to a full year. Like with most frozen foods the texture will change a bit and become more like a pureed ice cream cone so your options aren’t as limitless as they are with fresh fruit. There are plenty of delicious ways to use frozen watermelon but it will cut down on food waste and add a little bit of super-cold sweetness to your day.

If you have a whole uncut watermelon your first step is to break it up. Never freeze an uncut watermelon. It’s nearly impossible to slice and there’s also the risk that it will explode in your freezer. (And then there’s the whole space issue.) So cut it into the shape you want then remove the rind and seeds.

Line a baking sheet with parchment paper and spread the sliced watermelon evenly across it leaving plenty of space between each piece. Place the sheet in the freezer for two to three hours. Once the fruit is completely frozen transfer it to freezer-safe zip-top freezer bags. Be sure to write the date on the bags so you have an idea of when it’s ready to use. Frozen watermelon will be at its best for about eight months but can last up to 12 months.
