Cowgirl Candy | Pickled Candied Jalapeño
Candied jalapeños are a must-have summer pickle in our house. It started the year I planted six jalapeño plants. Chilies are plentiful. Instead of ripening politely one or two at a time the peppers are ready two three four or more pounds at a time.
That summer faced with (literally) nine pounds of ripe jalapeños I needed a delicious solution. Instead of the traditional spice blend found in most candied jalapeño recipes which resemble bread-and-butter pickles I opted for the sweet and aromatic flavors of cinnamon (or canela) vanilla and apple cider vinegar.
Starting in mid-summer the farmers market will start displaying giant piles of chili peppers. Friends with gardens can dump grocery bags full of peppers on your porch and get going. Then you’ll want to make these fiery and delicious candied slices.
