I recently bought a bunch of carrots with bushy tops. At first glance they were a beautiful bunch – bright orange in color with vibrant green still attached. But it wasn't until I took a second look that I noticed the little carrots lying next to their bigger brothers and sisters. Some of the littlest carrots were no thicker than a knitting needle and not much longer than my little finger. I ate them after a quick rinse. I put the bigger boys to work in this pan-tossed white bean and herb salad.
