If you somehow combined a coconut macaroon with a little bit of carrot cake you might get a cookie like this. I took some leftover carrots from Bryant’s Jamaican Veggies Patties grated them up and made a batch of carrot cookies. They’re egg-free vegan and sweetened with maple syrup. I used fragrant coconut oil lots of chopped walnuts and also rolled oats. For those of you who liked Nikki’s cookie recipe from a while back give this one a try. The oats turn out golden brown and a little crispy on the bottom but the carrots coconut oil and a hint of ginger keep everything nice and gooey on the inside. So good.
