This is a quick and delicious recipe that goes well with white rice alone or with white rice and lentils. It is filling and doesn’t require a lot of salt or oil. A drier version can be eaten with naan or pita flatbread. Reduce the chili powder for a kid-friendly meal. Quick-cooking vegetables such as beans peas and corn can be added for extra crunch and color. You can use white onion instead of the spicier red if you prefer. If you find that the vegetables are sticking to the bottom without being fully cooked add 1/2 cup of water and cover. When cooked remove the lid and cook on very low heat until the water evaporates.
