Easy Cauliflower Rice Burrito Bowls – Meal Prep Recipe
Another favorite? The burrito bowl. It’s the first thing I crave when we get home from a long trip. It’s quick easy healthy and delicious.
I have my classic version of the 30-Minute Burrito Bowl in our printed cookbook (!!). And after recently trying my hand at Cauliflower Rice Stuffed Peppers (!!) I knew a speedier-inspired version of the same meal was in order. I think you know what happened next. (Hint: this deliciousness.)
It’s not clear when or who invented the burrito but there are several theories that place its origins in Mexican cuisine. The concept seems to have been introduced to the US later in the 1950s and has since become incredibly popular and has taken on many forms. I mean how can you go wrong with delicious ingredients in a tortilla?
