I’ve been thinking a lot about grilled skewers lately. It started with a conversation at the Serious Eats office with Sho about Japanese yakitori and spiraled into a YouTube wormhole of watching hours of Abruzzese lamb arrosticini grilling videos. When I finally stopped watching meat wrapped and portioned into kebab cubes I decided I wanted to develop a recipe series for grilled meat on a stick.

Before I got started on the food I needed a better solution for grilling skewers at home. Eventually I came across this inexpensive effortless device that mimics the setup of cooking real kebabs by placing the food much closer to the coals replacing the traditional grill grate used in most recipes. Placing the skewers closer to the heat reduces the time between browning on the outside and heat penetration on the inside resulting in more evenly cooked food. However it also forces the cook to pay more attention to the grilling process; flames must be managed by removing the skewers from the flames as needed and the skewers must be turned more often to prevent ingredients from getting charred.
