Easy Sushi Rice Recipe – How To Make Sushi Rice For Seaweed Tacos

2 cups uncooked sushi rice

¼ cup seasoned rice vinegar or more to taste

Place the rice in a colander and rinse under cold water until the water changes from cloudy to completely clear about 2 minutes. Place the colander over a bowl and let it drain until almost dry about 1 hour. Transfer to a heavy-bottomed saucepan with a tight-fitting lid.
