Creamy chestnut soup
Years ago I traveled with an aikido friend to Shikoku a southern island of Japan.
One day while we were out for a brisk walk we discovered the path covered in chestnuts. We gathered a bunch and took them back to where we were staying.
We weren’t sure how to cook them but we’d seen plenty of vendors in NYC with pans full of hot chestnuts in them. We decided to roast them. We placed the chestnuts in a single layer in a large skillet and put them on high heat.
