Chicken green salsa tamal/ tamales de pollo con salsa verde•

For holidays and celebrations it’s customary for my family to get together to make a variety of tamales including tamales de pollo con salsa verde. The version of chicken and green salsa tamales I grew up eating featured shredded chicken in a refreshing green salsa packed with tomatillos garlic and fresh cilantro. My recipe here is inspired by my family’s version but I’ve added a few twists of my own: Crispy chicken skin is minced and folded into the filling for a rich chicken flavor and textural contrast plus ground cilantro is added to enhance the salsa verde. When the bright tangy and spicy green chicken filling is spread in a thin layer over pillowy masa and folded in to form a tamale the tang of the filling pairs perfectly with the rich corn dough.
