A fresh chickpea and artichoke salad made with ingredients that will keep well in the pantry and fridge. It has a nice balance of earthy salty and green. Flat leaf parsley has a much better flavor than curly parsley but either is good and I’ve used a tablespoon of dried in a pinch.
