Today’s chickpea hotpot recipe was inspired by a little early spring cleaning. I have a certain shelf in a certain cupboard in my kitchen that is filled with all sorts of grains legumes and rice. These ingredients do their best to spill over and infiltrate other places nearby (the fridge various bowls on the counter other cupboards) but I do my best to keep them in their place. One of the problems I run into is the nearly empty bags and jars—the 1/2 cup of purple rice here the 3/4 cup of whole wheat couscous there. I end up with whole bunches of these stragglers. During this particular cleaning I came across a large bulging plastic bag with only a handful or two of bulgur wheat in one of the corners. Not wanting to throw it away I used it as the starting point for today’s recipe. I have an abundance of citrus fruits at the moment so the quick-cooking bulgur cooks in a light broth with orange juice. Lots of chickpeas small pieces of cauliflower onions and leafy greens add texture and substance to the hearty pot.
