This thick parsley and olive oil spread is eaten in Argentina as much as ketchup is eaten in the rest of the world. There are several variations and I think every chef in Argentina puts their own spin on it but it always includes Italian flat-leaf parsley extra virgin olive oil vinegar and garlic.
