This summer John and I went to Indonesia. I can think of some random place to go but our friends who live in South Korea were going to Bali Indonesia for a vacation and invited us. With all our free air miles we figured "What the heck let's go to Bali." And we did. And lo and behold I stumbled upon perhaps the cutest little coffee/food/gelato place I've ever been to: Sea Circus.

Thanks to a recommendation from a fellow blogger who lives nearby we stumbled upon this somewhat familiar "American" eatery with a Balinese twist. Oh man it was delicious. And the coffee! If you haven't had a good cup of coffee for 10 days or more and then someone puts a good cap in your face you can die. Like literally die. And don't even get me started on the tacos…

Another reason I loved this place? They had BACIO (chocolate hazelnut) gelato which was rich and chocolatey and intensely hazelnut flavored thanks to little bits of hazelnut mixed into each bite. It was intense.

Ever since I slurped down that bacio gelato cone I can’t get the idea of making chocolate hazelnut cookies out of my head. So I headed into the kitchen to test them out. After one raw batch and one baked I decided to give the no-bakes a go. I mean 4 ingredients no butter sugar or baking AND they tasted better? It was kind of a no-brainer.
