In preparation for a long vacation I was looking to get rid of all the junk in my fridge when I came across some chocolate leftovers and about a liter of rich chocolate ice cream. Good chocolate ice cream is expensive here in Singapore so I didn’t feel like throwing it away or even eating it (unusual for me but I had just packed my swimsuit). Instead I decided to make a fun last-minute dessert of ice cream bonbons and give it to my lucky neighbors.
Ice cream bonbons are simply scoops of ice cream covered in chocolate. They are so easy to make that you almost don’t need a recipe. They look great and are a great way to serve ice cream without it melting everywhere. Even better they can be made ahead of time. Once the chocolate has hardened you can store them in the freezer for a few days stacked between sheets of parchment paper and placed in an airtight container.
