One of the best things about having a 6.5-year-old is that he now has classmates to give us the annual gift of Thin Mint Cookies. If there were other Girl Scout Cookies worth celebrating I didn’t know about them until I picked them up earlier this week when I saw other parents rushing out with boxes of curiosities like Samoas and Tagalongs and a full-scale investigation began. Seriously why didn’t anyone tell me about those crunchy chewy rings of caramel coconut and chocolate stripes? Has there always been a cookie with both peanut butter and chocolate inside or is this some kind of millennial baby voodoo? Making up for the time lost to Thin Mint blinders begins here now.

The other great thing about elementary school kids is the genuine excitement over math holidays like Pi(e) Day next Monday something I used to celebrate only sarcastically because I was a terrible person with a life without wide-eyed wonder. So when I saw a Tagalongs-style peanut butter pie on Tasting Table this week and realized it was easy enough to make in my current sleep-deprived state while also filling the giant peanut butter pie-shaped hole in the archives it was a done deal.

I’ve always loved the idea of peanut butter pies but (forgive me I know how unworthy this makes me) found them a little cloying and overdone in their standard form not to mention the Cool Whip that ruins most perfection. This one however is deliciously to the point with a buttery shortbread crumb base a dense layer of creamy peanut butter (with that essential tangy oomph that many peanut butter desserts lack when they don’t contain cream cheese and salt) and a thick glossy layer of dark chocolate ganache dusted with sea salt and it only requires 10 minutes of baking time. Sure Pi(e) Day could be celebrated with flaky crusts seasonal fruit and zero PIPIEGI (Processed Ingredients Processed Into Even Greater Ingredients) but where’s the fun in that?
