Here’s a variation on the Peppermint Bark Chocolate Chip Cookie recipe you love. The key to making these cookies taste great is to fill them with the peppermint bark. This dough also freezes really well. So as I mentioned in the headnotes make a big batch bake half and form the other half into dough balls. Freeze on a baking sheet until hard then store in a freezer-safe plastic bag – ready to bake at a moment’s notice.
