CHORIQUESO! How to Make My Favorite Mexican Restaurant Appetizer & Chile Pequin Salsa Recipe
Serious Eats / J. Kenji López-Alt
I wasn’t hungover during a quick visit to Cincinnati with Laura Arnold (aka the Cincinnati Nomerati) but if I had been I would have been trembling with fear as we tucked into a massive plate of choriqueso at Taqueria Mercado downtown. I can’t attest to the authenticity of the dish but in concept it’s a near-perfect and unparalleled plate of junk food: hot oily warmly spiced slightly tangy chorizo sausage combined with gooey melted cheese.
How is it different from that other Mexican junk food classic queso fundido con chorizo (see my recipe here)? Well not that much the main difference is the ratio of gooey fondue-like cheese to chorizo.
