The sun was starting to shine through and we could smell the aroma of mediocre coffee with too much cream and such. When we finally came to we would take turns in the bathroom fixing the damage to our hair and facial wrinkles before shuffling to the kitchen. My sister was usually less cheerful than I was… I'm a morning person by nature. But Grandma's cinnamon sugar toast always seemed to bring out the morning person in all of us even the night owls.

After I decided to try a dairy-free diet on January 1st I knew it was going to be tough if only because I would miss ice cream. Whether it was planned or sporadic John and I had developed a habit of going to our local dairy/ice cream shop at least once every few weeks to get eggs milk and a double bun.

It’s been almost three weeks since I’ve had ice cream and I was starting to fall off my chair a little so a dairy-free recipe was a must. I’ve experimented with no-ice-cream maker recipes before and while they’re great for their simplicity I knew consistency would be key in a dairy-free version. So I ran downstairs and borrowed my friend Laura’s ice cream maker and two cans of coconut milk later I was in business. The cinnamon sugar toast was inspired by my grandma’s favorite breakfast and one I still crave often.
