To get a light crispy batter you need to create bubbles which can be formed by adding baking soda seltzer water or as in this recipe beer to the batter. Another trick that helps create a light batter is to add cake flour which is lower in gluten and produces a lighter coating than all-purpose flour. This five-ingredient recipe also calls for paprika for added flavor but you can leave it out if you don't have it on hand or substitute onion or garlic powder.

Deep frying usually requires that the food be coated in a mixture before being fried in oil. That coating can be either breadcrumbs or batter and the right choice really depends on whether you want a firmer (i.e. crispy) coating or one that is lighter and crispier. For a crispy exterior choose breadcrumbs and for a light and crispy coating a batter is the best choice.
