Sometimes especially if I’ve had a bad day I’ll stop at a branch of New York’s famed Magnolia Bakery on my way home for a chocolate cupcake. The cake is moist and chewy loaded with bittersweet cocoa flavor and topped with a swirl of chocolate buttercream and a handful of sprinkles. It’s a fun indulgent treat that never fails to cheer me up. Even though cupcakes get a lot of hate—Slate once called the dessert “a blight on our country” and Vice even went so far as to say there’s something “fundamentally wrong” with the candy—I still have a soft spot for the diminutive dessert. I’m convinced that anyone who has a negative opinion of cupcakes simply hasn’t had a good one. The very best cupcakes are moist and flavorful with just the right amount of silky frosting to compliment each bite. The best way to guarantee a great cupcake? Make it yourself. (Yes that even applies to those of us who pass a Magnolia on the way home from work.)
Luckily for us our Test Kitchen colleague Anna Theoktisto from Birmingham has a fantastic recipe for classic chocolate cupcakes that are soft and deep-flavoured with a pleasant subtle sour cream flavour. It’s an incredibly simple recipe that doesn’t require a mixer and takes just 15 minutes to prepare the batter before baking making this a low-fuss dessert that’s perfect for weeknights and special occasions alike. Here’s how to make them.
Use a combination of dark chocolate and cocoa powder for a double chocolate flavor. While you can use milk chocolate for a sweeter cupcake we recommend using chopped dark or pure chocolate which typically contains between 64 and 72% cocoa. For a more complex cake we incorporate Dutch-processed cocoa powder into the batter which gives a smooth earthy chocolate flavor.
