How to Make Vinaigrette Salad Dressing: Jacques Pépin Techniques | KQED
This French vinaigrette dressing is traditionally whisked into the bottom of a large salad bowl. Once it’s done lettuce and other ingredients are added to the bowl and gently tossed to coat the lettuce leaving any excess dressing at the bottom of the bowl. It’s a great technique that results in perfectly dressed salads but it’s also a great option to whisk up a double triple or quadruple batch in a small jar to use over the course of a few days.
