Gin Fizz Classic Recipe

Almost identical to the popular Tom Collins the gin fizz has a very slightly sour citrus flavour that allows the gin to shine against the fizz of the soda. The two gin highballs share every ingredient although the Collins uses a little more lemon juice with lime being a popular option in the fizz.
The egg white is also an important difference. An authentic gin fizz (sometimes called a silver fizz) should contain it but many drinkers now choose to leave it out. The use of the egg white has a big impact on the fizz providing a lovely mouthfeel and frothy top that makes for a pleasant drink.
