Here in the United States when most people say they’re making lasagna they almost always mean the baked dish of wide noodles with thick layers of ricotta cheese mozzarella and tomato or meat sauce. But that limited use of the term doesn’t quite capture the vast possibilities of lasagna as it’s prepared in Italy especially the king of all lasagnas: lasagna Bolognese.
