Classic QUICHE LORRAINE from the French chef
The mother recipe among quiche recipes is the quiche Lorraine: a light custard with lots of bacon in a butter crust.
Culinary trends took a strange turn in the 70s when quiche got a reputation as a Ladies Who Lunch type dish. I guess it was because they took out the bacon and changed everything (asparagus goat cheese mushrooms they even took out the crust).
But the classic quiche Lorraine has probably survived mainly thanks to the bacon!
