There is a common saying about making risotto that goes something like this: Mamma mia! It is such a pain to stand and stir forever and ever. Well folks that is a load of nonsense. I am not sure when the idea that risotto is such a labor-intensive process first arose but we need to let it rest.
Here’s the truth: Risotto is relatively easy and it’s relatively quick and while it does take a little time stirring on the stove it’s not overly difficult or overly complicated. I can think of a million kitchen tasks that I find more annoying than making risotto. Peeling garlic cloves is right up there but everyone says “you can never have too much garlic.” Oh yeah you can just ask the person who has to peel it.
