Somewhere in the morass of time that was this past winter my husband convinced me that we should watch Ted Lasso and despite my skepticism about the ability of a dad-joking American football coach who gets a job coaching professional soccer in England to hold my interest I reluctantly agreed. It turned out to be… sort of delicious? Objectively really delicious. Don't worry I won't be talking about sports today and there will be no spoilers but just know that homemade shortbread cookies play a recurring role and that's where our story begins.

Easy Sugar Cookies | Smitten Kitchen with Deb Perelman

Once the season was over my hunt for the best* shortbread recipe began. My platonic ideal of shortbread has always been Walkers brand of shortbread fingers and I know this will upset some people as there are so many better ones out there especially homemade ones but I live quite a distance from the shortbread motherland of Scotland so in their defence these packaged biscuits have the exact same ingredient list as homemade ones (butter flour sugar) and when does that ever happen?

I wanted to recreate them as best I could and since there are three ingredients again I thought it would be a piece of cake. However I have used an unimaginable number of pounds of butter over the past few months to get them to the way I thought they should be.
