how to make REAL COCHINITA PIBIL tacos
Cochinita pibil (ko-chin-ee-ta pee-beel) is a simple stewed pork dish that originated in the Yucatan region of Mexico.
It's one of my friend Holly's favorite dishes to cook and ever since she first came across recipes for it first in Diana Kennedy's The Cuisines of Mexico and then in a book called Mexican Border Flavors Holly makes it whenever she can.
This is a feast. We once made it with almost four pounds of pork shoulder and invited another couple over for dinner. We ate it all up with a mountain of rice and lots of beer.
