A few times a year usually in the summer I come across a photo of what looks like the perfect BLT sandwich. Plump vibrant heirloom tomatoes juicy lettuce crispy bacon and a ribbon of mayonnaise oozing out of perfectly toasted bread. It looks incredible. The problem is I don’t eat bacon. So I usually make a sandwich that attempts to meet many of the same requirements something along the lines of this sandwich (9 years ago!). Recipes evolve and I thought I’d share the updated version that I’ve been making lately—a very similar concept with a mix of coconut “bacon” and crumbled tempeh seasoned and fried alongside the coconut. You can make a big batch of this and keep it in the freezer for quick use. All in all it’s a legitimate alternative for your vegetarian and vegan friends or just anyone interested in plant-based meals.
