Coconut Chocolate Chip Cookies
I know some of you aren't big fans of coconut but I love the taste especially in combination with chocolate.
These cookies are a great combination of soft and chewy a cross between macarons and chocolate chip cookies. The recipe calls for unsweetened shredded coconut which allows the coconut flavor to shine through and not be masked by too much sweetness. (I used Bob's Red Mill.)
I like to use a large cookie cutter (like this one) to spread these cookies out on the baking sheet. The cookies hold their shape while baking and come out as nice domes. If you like your cookies flatter you can also flatten them with a water glass before baking. (Flatter cookies will be a bit tougher and not as soft.)
