When we traveled to Japan we found this amazing restaurant called Mr. Farmer (recommended by my buddy Erin). It was a hidden gem with tons of juices smoothies salads and vegan dishes and I was in heaven.

Simple Authentic Thai Green Curry at Home
One of the dishes I had at least three times there was a green curry that was so brightly colored that I was instantly obsessed with it. It was perfectly seasoned creamy and super comforting when we were thousands of miles from home.
