Coconut Shrimp Simple Crispy and Delicious

It’s unclear where the crunchy nutty coconut shrimp entered snack food lingo. They may have originated in the Caribbean they may have originated in Polynesia or they may have been a purely American tiki bar invention. But they’re so popular that you’ll find them everywhere from Thai restaurants to Irish pubs.

Conceptually they are simple: replace the crumbs in a standard breadcrumb base with dried shredded coconut and deep fry them. If you get it right you will get a remarkably crispy thick crust of aromatic coconut surrounding a core of juicy perfectly cooked shrimp without a hint of rubberiness.

You can use any dipping sauce you like but my favorite is a sweet chili sauce loosely based on Thai nam prik pao made with dried chilies palm or brown sugar vinegar garlic and fish sauce.
