Gently poached in a broth of coconut milk lemongrass ginger fresh chilies and fish sauce this tender cod makes an easy and flavorful dinner. As I mentioned when I wrote about cooking à la nage the fish is only half submerged in the simmering broth which makes it cook more gently than with regular poaching. Additionally the smaller amount of aromatic broth effectively seasons the cod and infuses it with the flavors of the cod. If you want a richer broth use only coconut milk for the liquid; it will be thick and intense and frankly a little greasy. If you want to lighten it up you can replace half of the coconut milk with vegetable or fish broth.
