The Biggest Mistakes Everyone Makes When Cooking Pork

We spoke to butchers and chefs about the common mistakes they see in the store and in the kitchen. Chef Jack Bennett executive chef at International Smoke in San Francisco gave his take on choosing the right cut and preparing it correctly for each dish. He noted that some of the most crucial steps happen before you even start cooking. Rosangela Teodoro a butcher and owner of Teodora’s Boucherie Gourmande gave us some tips on preparing different cuts of pork and cooking for a crowd.

Both agreed that many of the mishaps they see can be prevented by knowing which cuts to choose how to trim each piece and the best seasoning methods. Paying attention to how long it cooks is also key to a delicious piece of pork that is juicy and full of flavor as overcooking is one of the most common mistakes. Here are the biggest mistakes they pointed out.

The first thing you need to decide when preparing pork is what kind of dish you want to cook and which cut is best. If you choose the wrong cut—for example ribs if you want pulled pork—it can be nearly impossible to get the texture and flavor you want. Talking to the experts at your butcher is a great way to find out what they recommend and get the best cut. Share what kind of dish you want to cook and what your favorite cooking method is such as grilling pan-frying or smoking.
