Anytime you write about cornbread there's a good chance it'll stir up controversy. It seems like everyone I've ever known from the South has their favorite way to make cornbread and every way is different.
What sets Southern cornbread apart from say Yankee cornbread or other cornbread you eat outside the Southern states is that it is savory not sweet and it is made primarily from cornmeal.
Northern cornbread is more like a cake on the sweet side with a finer crumb due to more flour in the mixture. Southern cornbread is flavored with bacon grease and fried in a cast iron skillet a perfect side dish for barbecues or chili. It is also quite crumbly.
