I first heard of Coronation Chicken during the Diamond Jubilee of Queen Elizabeth II. It’s no surprise that it was created for her coronation in 1953 and is a tasty twist on chicken salad with curry powder raisins and sometimes nuts. I’ve made it many times and it’s absolutely delicious.
As I was thinking about the sweet savoury and spicy flavours of coronation chicken I realised that they would work perfectly in coleslaw. With colourful and crispy coleslaw mix juicy mango crunchy cashews and chewy raisins it is an explosion of flavours and textures. A simple dressing of mayonnaise yoghurt lemon juice and curry powder is all you need to complete the dish.
