One of the dishes was a vegetable risotto that the restaurant was able to make vegan by omitting the cheese and butter. Perhaps a mortal sin when making risotto but they did it anyway. One bite and the inspiration for the recipe was born.
Risotto is a rice dish that is believed to have originated in Milan Italy. The first version was called Risotto alla Milanese and was traditionally made with butter onion white wine broth salt saffron and Parmesan cheese. Since then many flavor variations have emerged.
Our plant-based version is untraditional but dairy-free and just as delicious!
