My first ever trip to Louisiana was exactly what it should have been: a food and drink extravaganza. I had arrived in New Orleans late one night with my best friend and within an hour of landing we were tucking into platters of oysters. The next morning we got up and went to Mother’s for breakfast before driving to our final destination: a friend’s house in Lafayette where her family was boiling 400 pounds of crawfish for lunch. Breakfast that is.

We ate as if we would never eat again; the fact that we were only hours away from eating our body weight in crawfish didn’t matter. The highlight of that breakfast for me was a bowl of jambalaya covered in a torrent of goop. “Round” I dizzily came to know as the rendered fatty scraps and grease from a beef roast. That jambalaya was the best I’d ever had up to that point.
