For a long time I used a different method of making pie dough than the one I’m going to share today. The process was completely by hand involved lots of spreading and folding and it was amazing—a beautiful pie crust every time. This was in San Francisco where my kitchen usually stayed pretty cold. Summer temperatures rarely rose above 60°F. It was a pie maker’s dream—cold marble countertops year-round.
