Crispy Yuca Fries (Fried Cassava) – Food Wishes
1 yuca (cassava) root
Peel most of the yuca and cut off the hard end. Cut the yuca into thirds. Place each piece on its side and carefully cut lengthwise into quarters.
Place the yuca in a pot of cold water. Bring to a boil over high heat; reduce heat to medium and simmer until just tender 5 to 6 minutes. Drain the yuca on a plate lined with paper towels. Let cool to room temperature.
