This cucumber mint salad is crisp and refreshing. While white balsamic and brown balsamic vinegar have similar flavor profiles white balsamic is used here to keep the salad green and vibrant. Salting the cucumber before tossing it with other ingredients allows some of the moisture to drain out which helps keep the cucumber crisp while it sits in the dressing. Don’t skip this step!
