Curried Cauliflower Rice with Lentils and Crispy Shallots (Inspired by Mujadara) | Minimalist Baker

Mujadara is a satisfying vegetarian dish with Middle Eastern and Arabic influences. It’s traditionally made with riced lentils and caramelized onions making it incredibly affordable and satisfying (and plant-based of course!).

The spices can range from simple salt pepper and cumin to more complex flavors like cinnamon lemon zest and cayenne pepper.
