Chocolate gets hard in my kitchen every summer and this time is no different. Apparently the only time I got close to chocolate with a ten-foot pole this summer was over six weeks ago when I made some makeshift chocolate donut holes in the lull between rhubarb/strawberry season and all the wonderful fruit that has come since. And I like chocolate the way some people like bagels. This is not good.

The 'I Want Chocolate Cake' Cake | Smitten Kitchen with Deb Perelman

It’s just that every time I think about making something with chocolate I put it off until autumn and then winter. How boring I’ve become since I started adapting my cooking to the seasons! I reason that I can make chocolate treats all year round but nectarines will only be as brilliant as they are now and then again next summer and I’ll miss them all the time so we have to focus on each other for as long as possible. Me and summer fruit become intimate.

I almost felt like I was cheating on my berries and stone fruits when I made this simple chocolate cake this week except for one thing: this is not a chocolate cake stuck in a blanket of fresh winter snow. For that there are chocolate soufflés with white chocolate cream and this rich slab; show them to me on a sultry summer day and I might just opt for “just tea” for dessert probably for the first time in my life. But not every chocolate craving requires a dip in a vat of chocolate truffles to be satisfied. Sometimes you just want a slice of cake. Often that’s on a Tuesday night and they deserve a one-bowl one-loaf cake like this one.
