On a stretch of road outside Palm Springs a small white building is filled with dates prepared in every conceivable way. Covered in chocolate. Spinned into milkshakes. Refined into sugar. It’s because of this place that when I think of Palm Springs I picture wrinkled brown dates as much as palm trees swimming pools and drunken Rat Pack stars.
Among my latest haul from that date shop in Palm Springs was a bottle of date syrup that I was going to use to flavor some oatmeal but I’ve since learned that I prefer to use it to sweeten drinks. Today it lends a touch of sweetness to a variation on the Martinez cocktail a darker sweeter alternative to the martini that may even be older than its drier tuxedoed cousin.
