It’s not entirely clear where Penne alla Vodka originated. Some say it’s Italian some say it’s Italian-American some say it was invented by vodka manufacturers trying to pass it off as Italian. The only thing we know for sure is that the dish—penne pasta tossed in a smooth creamy sauce made with tomato cream and a dash of vodka—became popular in the U.S. sometime in the late 1970s and early 1980s.

The history may be confusing but the flavors are crystal clear. Simultaneously rich in cream but with a sharp clean taste from the vodka and crushed red pepper it’s the kind of sauce that comforts you in cold weather but also makes you think of the warmer months to come.
