The more flavorful the fresh peaches you start with the better the dried version will be. For this recipe you can use either hard-pitted or sticky-pitted peaches. As their name suggests hard-pitted peaches have a pit that is easy to remove while sticky peaches require the help of a knife. The latter are the most popular for preserving drying canning and baking as they are sweeter and juicier. But either will yield great results.
