This dish always reminds me of cold winter nights in our Ballymun apartment where my ex-wife would make this traditional Dublin winter stew. It relies heavily on Irish sausage and bacon so try to use those if you can. If you can’t use a lean bacon like Canadian bacon and a regular uncooked breakfast sausage. This is sometimes called a white stew because of the milk.
