This is an Austrian classic. Knödel (pronounced "k") means dumpling in German. My mother made this dish a lot when I was little because it's a great way to use up stale bread. It's still one of my fondest childhood memories. The amounts are approximate because this is one of those recipes that isn't written down so I had to follow her around the kitchen the last time she made it. Make sure the bread is stale. If it isn't dry it out in the oven after dicing it.
