Dungeness Crab Cake Recipe | How to Make Crab Cakes
Here in the Pacific Northwest we have Dungeness crabs. They are huge compared to their East Coast Maryland crab brothers which usually weigh between 1 1/2 and 2 1/2 pounds each. In California they are in season during the winter but further north you can easily get them year round.
Due to their weight Dungeness crabs have more than enough meat to make the most delicious crab cakes.
These homemade crab cakes are a step-by-step adaptation of a recipe I found years ago in Ruth Reichl's Comfort Me with Apples. We use Dungeness crab because that's what we have here. On the East Coast? Feel free to use Maryland crab for this recipe.
