Kimchi! Pickles! Sauerkraut!

If you're new to fermentation and want to make sauerkraut pickles with kimchi or even fermented hot sauce an E-Jen container is the best way to set yourself up for success.

Sweet pickles sour pickles sauerkraut kimchi—I love fermented foods. Any vegetable that’s been preserved for a long time in salt or vinegar and aromatics so that it’s tangy and spicy the perfect complement to rich meats and strong martinis is the right condiment for me. But as a food writer and home cook who prides herself on her skills in the kitchen I was disappointed when I started working on a cookbook with my friend Scott Clark and my first attempts to recreate his kimchi fell flat. Twice I ended up with a layer of black rotten stuff on top a gallon of cabbage and other vegetable seasonings and salted shrimp underneath that showed no discernible bubbling. The lactobacillus—the beneficial bacteria that produce the lactic acid that ferments kimchi—showed no signs of life.
